Pesto Apple Salad

PestoAppleSaladRomaine lettuce tossed in a balsamic pesto vinaigrette, with sliced Granny Smith apples, toasted pecans, red bell peppers, blue cheese and croutons.




Serves 4


▪ Romaine lettuce — 2 hearts
▪ Granny Smith apple, sliced — 1 med
▪ Pecans — ½ cup
▪ Red or orange bell pepper, sliced thin — ½ med
▪ Blue Cheese — 2 oz crumbled
▪ Croutons — 1/2 cup
▪ Balsamic Pesto Dressing — 1 cup

Balsamic Pesto Dressing:

▪ ¼ c. balsamic
▪ ¾ c. olive oil/canola
▪ 1. Tbsp. pesto sauce
▪ sea salt
▪ fresh ground pepper

1. In large bowl, tear romaine lettuce into bite sized pieces.

2. Slice apple and pepper.

3. Toss lettuce with Pesto Vinaigrette a little at a time just until lightly coated in dressing. Lightly salt and pepper to taste.

3. Add remaining ingredients and lightly toss.
